Total dedication is the secret of Brian Lane’s successful career at Hallmark Care Homes. Brian goes out in Hallmark’s homes every day implementing new practices and ensuring that residents are getting well presented, nutritionally balanced food on a daily basis.
The head chef has created a number of recipes to keep residents hydrated and ensure they are getting the energy they need. These include a green tea and lime spritzer, mango and coconut smoothie and his very popular, fruit and nut bon bons.
As part of his role, Brian has been tasked with ensuring all kitchens have state-of-the-art equipment to ensure residents are eating safe and delicious meals. Some of this equipment includes a Thermomix to keep food at the correct temperature whilst being mixed to the appropriate consistency. He has also started the use of glass yoghurt pots for desserts to spark creativity in chefs and allow residents to see what they are eating. It also helps the care team to assess just how much the resident is eating.
He is now an integral part of the team and has already established himself as an expert in his field, already having a positive impact on the lives of residents.
